RAID 6 would offer better fault tolerance (any 2 disks can fail and the data will still be accessible) and RAID 10 would offer almost the same disk fault tolerance. Both will be easier to manage and use than a dual RAID 1 configuration.

There are no folders at all by default on the second RAID 1-volume but you can
manually create a shared folder named Public2 or whatever you prefer it to be called (as long as it is unique on the NAS). All shared folders will be used in the same way from the client computers regardless of on which volume they physically are located.

No, RAID has never ever been a replacement for backups. Without backups you will eventually lose data!
