Using HBS was a bit buggy, at least at my end. So I did remove HBS and use Backup Station again.
Personally I only use HBS for NAS backups to USB or other NAS's. it works for me.
As to Linux/Windows to NAS, I use UrBackup now, but use to use rsync to schedule jobs on the clients to backup to the NAS that has rsync enabled within HBS3.
Also: please switch GUI language to English prior creating screenshots fir the forum.

In the video the SMB/CIFS needs be created in "Storage spaces" first, a screenshot from my TS-473A:

Afterwards you can create Jobs. Depending on job type (sync job) the desired storage space can be selected as target or as source.

The fact is that the whole point is that I don’t have SMB / CIFS in HBS 3, so I probably would have already done everything

Actually hard to believe.
Please go to "Storage Spaces" in HBS3 and click to "Create". Post a screenshot of the outcome (please set GUI language to English before taking the screenshot).

Oh stop, you are not going there, I go to backup&restore - new bakup job - I choose a folder - and then he asks me to choose a destination storage space!
And how do they differ?

Not sure if I remember correct, but check, if SMB version v1 is running at target.
As far as I remember this app needs v1, higher versions can not be used.
