Ok, I managed to get this working... it was driving me crazy, but I needed to reboot the NAS so that the Emby services would stop.
As soon as I rebooted, I had access to the containerstation advanced tab, and could get everything working...

If you find a package for JellyFin, please do share, i'm finding the docker container to be quite slow with indexing my images.
