Looking at adding 4 or 6 m.2 on a qnap box. WIth 10 GBE.
What transfer speed is the best? I'm sure faster is good, but if the speed is unused???

What model NAS? What model expansion card?

Use RAID and external backups. RAID will protect you from disk failure, keep your system running, and data accessible while the disk is replaced, and the RAID rebuilt. Backups will allow you to recover data that is lost or corrupted, or from system failure. One does not replace the other.

I believe those are sata m.2’s. Double check on Qnap website under specifications for your model.
