I’ve searched in forum and on guides, but can’t find a u answer.
I’ve a qnap ts431p3 with a raid set with two thick volumes.
Is there a way to make accessible from myqnapcloud only one volume? Or is there a way to select witch shared folders have the permission to be seen on cloud?

Never expose your NAS to WAN ...so stop what you are doing!
Also, the NAS file interactions run via shares, so no need to run several volumes on your NAS (unless there is a specific reason to do so..e.g. different disk speeds for different purpose , SSD for IOPS)

Sorry but if i want a dropbox like storage without paying, how can I do without exposing my nas?

You cannot ... if YOU can easily reach it from WAN others can too..thats how it is
What you can do is run a VPN server and enable access from WAN for yourself
