Yeah I never had AV turned on, I have re-contacted QNAP support after the first failed attempt and they are going to their engineers to see why the box is failing at thumbnail generation (which is what they nailed it down too)

Just an update to this topic, I have found the issue
one of the media files was corrupted, however instead of skipping the file like it does for other files it fails to generate thumbnails for, it would just lock the box up, I have removed the file and thumbnail generation successfully completed,
Have sent the data to QNAP support for analysis.

I sat there and added 5 folders at a time for the DLNA library to scan and waited to see if it would freeze, once I got to those 5 that froze I started adding them 1 by 1 to see which one it did it on, When I found it I added everything but that 1 file and it worked, soon as I added that 1 file it froze, so I just deleted the media file and everything has been happy since
